Shun Premier - 9" Bread Knife

The Shun Premier series of knives start with a VG-MAX steel core. Shun wraps this with 32 layers of stainless on each side in a beautiful "hand hammered" look.  This pattern allows food to slide off easily.  The full tang construction is wrapped with an oval shaped pakka wood handle that fits comfortably in the palm of your hand and accommodates both right and left handed users. The knife is then honed to a razors edge by hand to a 16 degree double bevel. The Shun premier knives are super sharp, super balanced and some of the best knives available in Japanese cutlery.

Cuts crusty sourdough bread like a laser beam.

Except for my friend’s Classic Series Shun bread knife, I had never experienced this kind of easy bread slicing before, sometimes having to crush a great crust to get even a serrated knife through a perfect boulé. The Shun Premier, though easily one of the most expensive bread knives out there, is by far the best, surprising in its cutting ability and remarkably low crumbling (if that’s even a thing, seriously, no crumbs!) and as an avid baker of very crusty sourdough, I’d say worth every penny. I got the premier to match the set I have, but I found my friend’s classic series bread knife to be just as good.
