About GiantMouse
One evening during a US knife show in 2015, three men walked into a bar. It's unclear if they exchanged any bad jokes while they were there, but one thing we know for certain is that the idea for GiantMouse knives was born over drinks.
The men in question?
Renowned Danish knifemakers Jesper Voxnaes and Jens Ansø—they've been designing custom knives since 1989—and American entrepreneur Jim Wirth.
Fast forward to today, with a loyal following spanning collectors, enthusiasts, and everyday users, California-based GiantMouse is quickly establishing itself as a respected name in the knife community.
Where are GiantMouse knives made?
Most GiantMouse knives are manufactured in Maniago, Italy, known as Italy's "City of Knives," where knives have been produced for over 650 years.
Other GiantMouse models, like the ACE Nibbler and ACE Farley, are made to specifications in China by reputable knife manufacturing services Reate and Bestech, respectively.
What types of knives does GiantMouse produce?
GiantMouse offers various types of knives, including:
Fixed blades
GiantMouse fixed blade knives combine form, function, and class. They're perfect for various tasks, including outdoor adventures, everyday use, and tactical applications.
Popular models include the GMF1 and GMF4.
Folding knives
GiantMouse folding knife lines include the GM and ACE lines.
GM folding knife models are produced in limited quantities, typically 400-600 pieces per run, with about 25-33% made in a special version stamped with the Pirate Mouse logo. Once the 400-600 pieces are produced, the design is discontinued.
ACE models, meanwhile, come in unlimited quantities. They offer the same quality as the top-shelf GM line but at a more affordable price point.
Kitchen knives
GiantMouse isn't limited to fixed blades and pocket knives. The GiantMouse line of kitchen knives includes a chef knife, a Japanese-style Santoku knife, a paring knife, and a carving knife.
What materials are used in GiantMouse fixed blade knives?
GiantMouse fixed blade knives are celebrated for their versatility, utility, and beautiful designs. Materials used in their construction include:
-
Blade steel: Elmax, N690, M390
-
Handle: Brass, Micarta, G-10
-
Sheath: Leather
Elmax, N690, and M390 are all high-quality stainless steels. They're known for their edge retention, corrosion resistance, toughness, and ease of sharpening.
What are the key features of the GiantMouse GMF3 fixed blade?
GMF is GiantMouse's line of fixed blade knives. The GMF3 builds on the successes of previous fixed blade models. It's inspired by the traditional Khanjali, a double-edged dagger used since ancient times in the Caucasus region—the region comprising Armenia, Azerbaijan, Georgia, and parts of southern Russia.
GMF3 features to note:
-
Blade steel: High-performance N690 cobalt steel
-
Blade length: 3.25 inches
-
Finish: Stonewash, satin
-
Handle scales: A choice between green or natural canvas Micarta
-
Sheath: Handcrafted leather
If you want the sleek and minimalist look of a skeleton knife, the GMF3's handle scales are removable. GMF3 knives are made in Maniago, Italy.
What is the GiantMouse Biblio?
The GiantMouse Biblio—or more accurately, the ACE Biblio—is a folding pocket knife named after the bar where the idea behind GiantMouse knives was conceived: the Biblio bar in Williamsburg, Brooklyn, New York.
The ACE Biblio comes in two types:
-
Classic Biblio: Smaller Biblio with a blade length that's less than 3 inches
-
Biblio XL: Blade length of 3.25 inches

What is the GiantMouse Atelier?
The GiantMouse ACE Atelier folding knife is a smaller version of the fan-favorite ACE Grand, a full-size folding knife.
ACE Atelier features:
-
Blade steel: Elmax
-
Blade length: 2.875 inches
-
Finish: Stonewash, satin
-
Handle scales: Titanium, carbon fiber, canvas Micarta
-
Pocket clip: Reversible tip-up wire

Both GiantMouse and Three Rivers Manufacturing (TRM) offer high-quality, well-designed knives that can last for years. Which is better depends on your needs and preferences.
GiantMouse knives are famous for their bold and sleekly beautiful designs, while TRM knives are known for their strong build but slim profiles. TRM knives are made in the USA.
Are GiantMouse knives good for everyday carry (EDC)
Folding knives from GiantMouse are perfect for EDC. Models like the ACE Biblio are compact and lightweight. They're convenient for daily use and can be easily carried and concealed.
Do GiantMouse knives come with a warranty?
Yes, they do. GiantMouse knives carry a lifetime warranty that covers manufacturing and material defects—but not damage as a result of disassembly, misuse, abuse, improper handling, or alterations.
To start a warranty claim immediately after purchase, contact GiantMouse via their website and provide the required information.
How do I take care of my GiantMouse knives?
Proper maintenance is necessary to keep your knife in perfect working order. Some tips:
-
Clean your knife's blade with a non-abrasive cloth.
-
Wipe the blade with a light oil after each use.
-
Wipe the blade from the back when cleaning (from the spine, moving towards the sharp edge).
-
Avoid contact with the sharp edge to prevent injury.
-
Always keep the blade sharp, as a dull blade can be dangerous. Consult with a knife store if you have no sharpening experience.
-
If you need to disassemble your knife, ensure you have the proper tools. Note that disassembly will void the knife's warranty.
