One evening during a US knife show in 2015, three men walked into a bar. It's unclear if they exchanged any bad jokes while they were there, but one thing we know for certain is that the idea for GiantMouse knives was born over drinks.

The men in question?

Fast forward to today, with a loyal following spanning collectors, enthusiasts, and everyday users, California-based GiantMouse is quickly establishing itself as a respected name in the knife community.

Where are GiantMouse knives made?

Most GiantMouse knives are manufactured in Maniago, Italy, known as Italy's "City of Knives," where knives have been produced for over 650 years.

Other GiantMouse models, like the ACE Nibbler and ACE Farley, are made to specifications in China by reputable knife manufacturing services Reate and Bestech, respectively.

What types of knives does GiantMouse produce?

Fixed blades

GiantMouse fixed blade knives combine form, function, and class. They're perfect for various tasks, including outdoor adventures, everyday use, and tactical applications.

GM folding knife models are produced in limited quantities, typically 400-600 pieces per run, with about 25-33% made in a special version stamped with the Pirate Mouse logo. Once the 400-600 pieces are produced, the design is discontinued.

ACE models, meanwhile, come in unlimited quantities. They offer the same quality as the top-shelf GM line but at a more affordable price point.

Kitchen knives

GiantMouse isn't limited to fixed blades and pocket knives. The GiantMouse line of kitchen knives includes a chef knife, a Japanese-style Santoku knife, a paring knife, and a carving knife.

What materials are used in GiantMouse fixed blade knives?

What are the key features of the GiantMouse GMF3 fixed blade?

GMF is GiantMouse's line of fixed blade knives. The GMF3 builds on the successes of previous fixed blade models. It's inspired by the traditional Khanjali, a double-edged dagger used since ancient times in the Caucasus region—the region comprising Armenia, Azerbaijan, Georgia, and parts of southern Russia.

GMF3 features to note:

  • Blade steel: High-performance N690 cobalt steel

  • Blade length: 3.25 inches

The GiantMouse Biblio—or more accurately, the ACE Biblio—is a folding pocket knife named after the bar where the idea behind GiantMouse knives was conceived: the Biblio bar in Williamsburg, Brooklyn, New York.

The ACE Biblio comes in two types:

The GiantMouse ACE Atelier folding knife is a smaller version of the fan-favorite ACE Grand, a full-size folding knife.

How do I take care of my GiantMouse knives?
