What are Miyabi knives?
Miyabi knives are high-quality Japanese kitchen knives renowned the world over for their signature sharpness, edge retention, and beautiful blade craftsmanship.
Where are Miyabi knives made?
Miyabi knives are handcrafted by the master artisans of Seki, Japan, a city famous for its centuries-old tradition of sword and knifemaking.
What makes a Miyabi knife such a great knife?
Miyabi Japanese knives are exceptional kitchen tools, and they're an absolute fan favorite for several reasons:
High-quality materials
The blades are made of premium steel like SG2, VG10, or FC61, which are known for their hardness, durability, and sharpness. Each Miyabi Japanese-style knife is rust-resistant and has an ultra-sharp cutting edge.
Damascus patterns
Many Miyabi knives come with distinctive Damascus steel patterns, which are created by layering various types of steel. A Miyabi Damascus knife isn't only visually appealing but incredibly precise as well.
Traditional craftsmanship
Miyabi Japanese knives undergo a multi-stage process that includes:
-
CRYODUR steel-hardening technique: The blades are ice-hardened at temperatures as low as -196°C immediately after forging. This enhances the steel's hardness, flexibility, and corrosion resistance.
-
Honbazuke honing method: This is a three-step blade sharpening process to create a razor-sharp edge.
Ergonomic handles
Miyabi knife handles feature materials like Pakkawood, Micarta, and Japanese birch. They're comfortable and provide a secure grip.
Innovation and culture
When you pair cutting-edge knifemaking technology (German engineering) with traditional artistry (Japanese craftsmanship), the result is a knife that doesn't just perform really well but is also a work of art.
Versatility
Miyabi knives come in various types: chef's knife sets, steak knives, bread knives, paring knives, utility knives, and specialty knives.
