The Tojiro Shirogami series of knives brings the old world Japanese craftsmanship to your kitchen. These knives start with core steel called Shirogami. This is a carbon white steel #2 and then has a softer carbon steel cladding surrounding it. This gives you an ultra sharp edge. The handle is an oak that has the Japanese "D" shape to it and finished off with a buffalo horn ferrule.

The Shirohami series are a double beveled knife.
Personally I find the Tojiro line of knives to be some of the best values available today.
